You need flour, water, salt and something that makes the dough rise. Most bakers today use yeast, a tiny living fungus that feeds on the sugars in flour. As the yeast feeds, it gives off a gas called carbon dioxide. The gas forms small bubbles in the dough, and those bubbles are what make a loaf light instead of flat and hard.\n\nTo make a simple loaf, a baker first mixes the flour, water, salt and yeast in a large bowl. At this stage the mixture is sticky and has no real shape. Next comes kneading: the dough is pushed, folded and turned on a table for about ten minutes. Kneading builds up gluten, a stretchy network formed by proteins in the flour. Gluten traps the gas from the yeast, much as a balloon holds air.\n\nAfter kneading, the dough is left to rest in a warm place, covered with a cloth. This rest is called proving. In an hour or two the dough should double in size. If the room is cold, proving takes longer; if it is very warm, the dough can rise too fast and lose some of its flavour. Many bakers prefer a slow, cool rise for that reason, and some leave their dough in the fridge overnight.\n\nWhen the dough has risen, it is gently shaped into a loaf and left to prove a second time, for a shorter while. Then it goes into a hot oven. In the first minutes of baking the loaf grows quickly, because the heat makes the gas bubbles expand before the yeast dies. A little steam in the oven keeps the outside soft for longer, so the loaf has time to grow.
